NORTH AFRICAN COUS COUS (for 4 servings)
200g Cous Cous
50g Chopped nuts
50g Harissa
40g chopped fresh coriander

Cook the Cous Cous and mix together with ingredients above

Seafood Kefta

INGREDIENTS (for 4 servings)
6 prawns - shelled and veined
6 scallops
250g kingklip
250g Salmon
2 onions - finely chopped
50g parsley - finely chopped
50g corriander, finely chopped
2 cups of breadcrumbs
2 eggs
20g harissa
2 tsp cinnamon
2 tsp tumeric
Salt & Pepper

COOKING INSTRUCTIONS

Mix together the fish, onion, parsley and breadcrumbs in a bowl.
Add the eggs, harissa, spices and seasoning. If the mixture becomes sloppy, add some more breadcrumbs. Make little patties from the mixture, and fry gently in a little oil.
Serve with North African cous cous and mango chutney.
Garnish with beetroot crisp.
