Lemon & Peanut Rice ( for 4 servings)
1 cup basmati rice
Water
50g peanuts, chopped roughly
2 lemons, zested and juiced

Cook the basmati rice until cooked through, approximately 15-20 minutes.
Strain the rice, and while it is still hot add the chopped peanuts and lemon zest and combine well

Allow the rice to cool, and before serving, add the lemon juice .

Recipes

 

INGREDIENTS ( for 4 servings)
20ml vegetable oil
500g lamb shoulder cubes
2 onion - finely chopped
10g ginger - grated
40g paprika
20g coriander - ground
2 cinnamon sticks
Saffron - pinch
100g parsley - whole
100g coriander - whole
S&P - 5g black pepper
2 pears, peeled, quartered and seeded

COOKING INSTRUCTIONS

Fry the onion, garlic, ginger until soft
Add the spices, and cook until the aromas appear

Add the lamb, season with salt and pepper, and the whole parsley and coriander
Once seared, cover with water, and allow to simmer until tender


Before serving, peel, quarter and deseed, and gently fry pear
Add to lamb once browned, and mix together
Serve with lemon and peanut rice
