Akara

INGREDIENTS (for 6 servings)
2 onions, finely chopped
10g garlic, crushed
2kg prawns, peeled and chopped
5g fresh chillies, green, finely chopped
20g fresh corainder, finely chopped
1 cup flour
2 eggs
1/2 cup breadcrumbs
1 cup black eyed beans, soaked
Salt and Black Pepper

COOKING INSTRUCTIONS

Boil the beans for 2 hours or until soft.
Once soft, remove from the water, allow to cool and rub the beans together to remove the skins.
Place into a blender, and blend until smooth. Add salt and black pepper.

Fry the onions and garlic until soft, and remove from the heat.
In a bowl, mix together the fried onion and garlic, the prawns, chilli, coriander and salt and black pepper.
Add the flour, breadcrumbs and eggs, and combine well.
Roll into culinders, about 8 cm long and 3cm thick.
Once rolled, place onto a floured tray, and allow to sit in the fridge for 30 minutes until set hard.
To cook the Akara, simply place the croquettes into a pot with oil heated to 180c. Cook until golden brown and serve warm.
