Fusion cuisine is a term that has been around since the late 1980’s.
Fusion is the art of combining the essences of different cuisine styles, spices and ingredients in order to create a unique dish which retains the elements of its original identity. This recognizable combination of flavours is the challenge faced by the bold chefs who endeavor to experiment with this ultimately creative blending technique.
At The Lihawu, we combine the robust spices of Africa with the more subtle dishes of Continental Cuisine.
An example of this delicate blending process would be our Peixe a Lumbo, a traditional Angolan Fish and Seafood stew. We use the traditional West Coast spices and create an elegant sauce in which to poach a fresh piece of Kingklip. The variety and combinations are endless and exciting!
