Toward the end of the nineteenth century, all whisky was spelled without the “e” on the end. Around the 1870’s, the reputation of Scottish whisky was very poor as Scottish distilleries flooded the market with cheaper spirits made in coffee vats. The Irish and American distilleries adapted the spelling “WHISKEY”, with the extra “e” to distinguish their higher quality product. Today, the word “WHISKEY” is used for Irish and American whiskies and the word “WHISKY” is used for Scottish, Welsh, Canadian, Australian and Japanese whiskies.
